Carrot Cake Cinnamon Rolls (Print Version)

# Ingredients:

01 - 16 oz pizza dough
02 - 1/2 cup shredded carrot
03 - 1/3 cup raisins
04 - 3 tbsp butter or coconut oil
05 - 6 tbsp granulated sweetener of choice
06 - 1 tbsp cinnamon
07 - Handful crushed walnuts or pecans (optional)
08 - Cream cheese frosting

# Instructions:

01 - Roll the dough into a very thin rectangle on a floured surface. If too sticky, add a little flour gradually. If using butter, soften but do not melt.
02 - Combine shredded carrot, raisins, granulated sweetener, cinnamon, and walnuts or pecans in a bowl.
03 - Spread the filling mixture over the rolled-out dough. Cut the dough into 13 long strips and roll each strip tightly.
04 - Place the cinnamon rolls in a greased baking pan. Loosely cover and refrigerate overnight or proceed to bake immediately.
05 - Preheat the oven to 400°F. Bake the rolls for 20 minutes or until cooked through.
06 - Frost the cinnamon rolls and serve. Store leftovers in the refrigerator and reheat before serving.

# Notes:

01 - If not using raisins, double the sweetener to ensure proper sweetness.
