Roll the dough into a very thin rectangle on a floured surface. If too sticky, add a little flour gradually. If using butter, soften but do not melt.

Combine shredded carrot, raisins, granulated sweetener, cinnamon, and walnuts or pecans in a bowl.

Spread the filling mixture over the rolled-out dough. Cut the dough into 13 long strips and roll each strip tightly.

Place the cinnamon rolls in a greased baking pan. Loosely cover and refrigerate overnight or proceed to bake immediately.

Preheat the oven to 400°F. Bake the rolls for 20 minutes or until cooked through.

Frost the cinnamon rolls and serve. Store leftovers in the refrigerator and reheat before serving.
