Cajun Shrimp and Crab Mac & Cheese (Print Version)

# Ingredients:

→ Cajun Shrimp

01 - 2 pounds shrimp, peeled and deveined
02 - 2 tablespoons olive oil
03 - 1-2 Tbsp cajun seasoning
04 - Pinch of salt
05 - Pinch of freshly ground black pepper

→ Mac and Cheese Base

06 - 3 cups elbow macaroni, uncooked
07 - 2 lbs fresh crab legs, cooked (or 2 1/2 cups imitation crab meat)
08 - 1/4 cup fresh or dried basil, plus more for topping
09 - 1 cup whole milk
10 - 2 - 2 2/3 cups evaporated milk
11 - 1/2 - 1 tsp paprika
12 - 1/4 - 1/2 tsp cayenne pepper
13 - 1/2 tsp salt
14 - 1/2 tsp freshly ground black pepper
15 - 2 large eggs, beaten

→ Cheese Mixture

16 - 4 cups sharp cheddar cheese, grated
17 - 2 cups mild cheddar cheese, grated
18 - 2 cups colby & monterey jack cheese, grated
19 - 1/2 cup parmesan cheese, grated
20 - Cajun seasoning for topping

# Instructions:

01 - Season shrimp with olive oil, cajun seasoning, salt and pepper. Cook in hot skillet for 4-6 minutes until pink. Set aside.
02 - Cook macaroni until al dente in salted water. Drain and mix with cajun shrimp, crab chunks and basil.
03 - Whisk together milk, evaporated milk, seasonings, and eggs. Reserve some cheese for topping, mix remaining cheese into milk mixture.
04 - Combine cheese mixture with pasta mixture. Pour into buttered 9x13-inch baking dish. Top with reserved cheese and seasonings.
05 - Bake at 350°F for 45-55 minutes until golden, covering with foil after 35-40 minutes. Let rest 25-30 minutes before serving.

02 - Can use more evaporated milk for creamier result
03 - Must rest before serving to set properly
