Spicy Cajun Potato Soup (Print Version)

# Ingredients:

→ Sausage

01 - 1 tablespoon vegetable oil
02 - 1 ring (13.5 ounces) andouille sausage

→ Vegetables

03 - 1 large onion, diced
04 - ½ cup diced celery
05 - ½ red bell pepper, diced
06 - 2 teaspoons minced garlic
07 - 4 large russet potatoes, peeled and cubed

→ Seasonings and Liquids

08 - 1 teaspoon Cajun seasoning
09 - ½ teaspoon kosher salt
10 - ½ teaspoon black pepper
11 - ½ teaspoon paprika
12 - ¼ teaspoon cayenne pepper
13 - 4 cups chicken broth
14 - ½ cup heavy whipping cream
15 - 1 cup mild cheddar cheese

# Instructions:

01 - Brown sliced andouille in oil for 3-4 minutes. Remove and set aside.
02 - In same pot, cook onion, celery, and pepper until soft. Add garlic briefly.
03 - Add seasonings, broth, and potatoes. Simmer 20-25 minutes until potatoes are tender.
04 - Return sausage to pot, add cream and cheese. Simmer 5 minutes until hot and cheese melts.
