Buffalo Chicken Mac Cheese Pizza (Print Version)

# Ingredients:

→ Pizza Dough

01 - 3 cups all-purpose flour
02 - 1 packet instant yeast (2 ¼ teaspoons)
03 - 1 teaspoon granulated sugar
04 - 1 teaspoon fine salt
05 - 1 tablespoon olive oil
06 - 1 cup warm water (45°C)

→ Mac & Cheese

07 - 2 cups elbow macaroni, cooked al dente
08 - 2 tablespoons unsalted butter
09 - 2 tablespoons all-purpose flour
10 - 2 cups warm milk
11 - 2 cups sharp cheddar cheese, shredded
12 - 0.5 teaspoon garlic powder
13 - 0.5 teaspoon smoked paprika
14 - Salt and black pepper, to taste

→ Toppings

15 - 1 cup cooked chicken, shredded
16 - 0.25 cup buffalo sauce, plus extra for drizzling
17 - 1 cup mozzarella cheese, shredded
18 - 0.5 cup cooked bacon, crumbled
19 - 2 tablespoons fresh chives or green onions, chopped
20 - Ranch or blue cheese dressing, for drizzling

# Instructions:

01 - In a bowl, mix warm water, sugar, and yeast; let stand for 5 minutes or until foamy.
02 - Add flour, salt, and olive oil to the yeast mixture. Knead for 5–7 minutes until a soft dough forms.
03 - Place the dough in a greased bowl, cover, and allow to rise for 1 hour or until doubled in size.
04 - Melt butter in a medium saucepan. Whisk in flour and cook for 1–2 minutes to create a roux.
05 - Gradually whisk in warm milk; cook until thickened. Stir in cheddar cheese until smooth, then season with garlic powder, paprika, salt, and black pepper.
06 - Add cooked macaroni to cheese sauce, stirring to coat evenly. Set aside.
07 - Toss shredded cooked chicken with buffalo sauce until fully coated.
08 - Heat oven to 245°C.
09 - On a lightly floured surface, roll out dough into a round and place onto a pizza stone or lined baking tray.
10 - Spread an even layer of macaroni and cheese on the dough. Sprinkle with mozzarella. Distribute buffalo chicken and scatter bacon crumbles over the top.
11 - Bake in the centre of the oven for 12–15 minutes until the crust is golden and the cheese is bubbling.
12 - Remove from oven. Drizzle with ranch or blue cheese dressing, extra buffalo sauce if desired, and sprinkle with chopped chives or green onions. Slice and serve hot.
