Keto Broccoli Bacon Cheddar Chicken (Print Version)

01 - 1 tbsp olive oil
02 - 2 large chicken breasts
03 - Salt and black pepper to taste
04 - 1 tbsp Italian seasoning
05 - 2 cups broccoli florets, blanched and chopped
06 - 6 strips bacon, cooked and chopped
07 - ⅓ cup mozzarella cheese, shredded
08 - 1 cup cheddar cheese, shredded

# Instructions:

01 - Preheat the oven to 400°F (200°C). Grease a casserole dish with olive oil.
02 - Take the chicken breasts and slice them in half horizontally. This will give you 4 thin chicken breasts to work with.
03 - Place the chicken breasts on the bottom of the casserole dish. Season with salt and black pepper to taste, then sprinkle with Italian seasoning.
04 - Layer the seasoned chicken with the chopped blanched broccoli, cooked and chopped bacon, shredded mozzarella cheese, and shredded cheddar cheese.
05 - Bake in the preheated oven, uncovered, for 20-25 minutes, or until the chicken has cooked through completely (internal temperature of 165°F/74°C) and the cheese is melted and bubbly.
06 - Remove from the oven and let rest for a few minutes before serving. Each portion is one topped chicken breast.

02 - You can blanch the broccoli by boiling it for 2-3 minutes and then immediately cooling in ice water.
