Preheat oven to 300°F. Line baking sheet with parchment paper or foil to catch bacon grease. Place cooling rack on top of lined pan.

Place brown sugar and red pepper flakes in separate bowls. Cut bacon strips into fourths to match cracker length.

Spread Boursin cheese on each cracker (about ⅛-inch thick). Place crackers side by side on prepared rack.

Place one piece of cut bacon on each cracker. Sprinkle liberally with brown sugar, then add a pinch of red pepper flakes.

Bake for 35-45 minutes, rotating pan halfway through. Begin checking at 30 minutes. Crackers are done when bacon is cooked and edges begin to brown.
