Blackened Cajun Salmon (Print Version)

# Ingredients:

→ Blackened Salmon

01 - 4 (4-5 oz) fillets skin-on salmon
02 - 1 1/2 tablespoons paprika
03 - 1 teaspoon ground cayenne pepper
04 - 1 teaspoon garlic powder
05 - 1/2 teaspoon black pepper
06 - 1/2 teaspoon onion powder
07 - 1/2 teaspoon dried oregano
08 - 1/2 to 1 teaspoon salt, to taste
09 - 3 tablespoons melted unsalted butter, divided
10 - 2 tablespoons olive oil

→ Garnish

11 - Lemon wedges
12 - Fresh parsley, chopped (about 1 tablespoon)

# Instructions:

01 - Set salmon fillets skin-side down on work surface and pat dry. Allow to come to room temperature so butter doesn't harden.
02 - In small bowl, whisk together paprika, cayenne, garlic powder, black pepper, onion powder, oregano, and salt. (Or use premade Cajun seasoning.)
03 - Brush both sides of salmon with half the melted butter. Sprinkle generous amount of seasoning mixture over fillets to create thick layer.
04 - Heat large skillet on high heat with olive oil and remaining butter. Add salmon skin-side down and cook 2-4 minutes until blackened on bottom.
05 - Reduce heat to medium. Gently flip fillets and cook about 5 more minutes until other side is blackened and internal temperature reaches 145°F.
06 - Serve with lemon wedge and sprinkle of fresh parsley.

# Notes:

01 - Substitute all spices with premade Cajun seasoning
02 - Adjust cayenne pepper for desired spice level
03 - Pairs well with tartar sauce or aioli
