Cut each potato into 8 parts. Fry the potatoes until golden but not overly dry. Place the fried potatoes into a bowl and mash with a whisk until smooth. Mix the mashed potatoes with dry seasoning and shredded cheddar cheese, then set aside.

Combine ground beef with dry seasoning. Divide the mixture into 4 equal parts and shape into patties. Fry the patties until both sides are lightly browned. Rest the cooked patties on a cooling rack to remove excess oil.

Divide the mashed potato mixture into 4 parts and flatten each to 0.5 cm thick. Place a beef patty and mozzarella cheese slice over the mashed potato. Wrap the beef patty fully in the mashed potato. Coat each croquette in flour, then dip in egg wash, and finally cover in bread crumbs.

Heat cooking oil in a pan to 170°C. Fry the croquettes until golden and crisp. Rest cooked croquettes on a cooling rack to remove excess oil. Serve with ketchup and mayonnaise.
