Quick Beef Noodle Stir Fry (Print Version)

# Ingredients:

01 - 8 ounces dried wide egg noodles (about 2.5 cups)
02 - 1 tablespoon vegetable oil
03 - 8 ounces beef flank steak or top sirloin (or leftover roast beef), sliced into bite size strips
04 - 1 small onion, sliced
05 - 1 medium carrot, thinly sliced
06 - 1 cup brown mushrooms, sliced
07 - 1 cup Chinese cabbage, sliced
08 - 1 cup spinach

→ For the Sauce

09 - 2 tablespoons soy sauce
10 - 2 tablespoons oyster sauce or hoisin sauce
11 - 1 teaspoon rice vinegar or mirin (optional)
12 - 1 teaspoon sesame oil
13 - ½ teaspoon ground cumin
14 - ¼ teaspoon ground black pepper or white pepper

→ For Garnish

15 - White sesame seeds (optional)

# Instructions:

01 - Bring a large pot of water to a boil over medium-high heat. Add the egg noodles and a pinch of salt, then cook according to package directions, about 6 minutes. Drain well and set aside.
02 - Heat vegetable oil in a large wok or pan over high heat until sizzling hot, about 1 minute. Add the beef strips and sauté until browned on all sides, about 3-4 minutes. If using leftover roast beef, cook for just 1-2 minutes until starting to warm.
03 - Add the sliced onion, carrot, mushrooms, Chinese cabbage, and spinach to the wok with the beef. Stir well and cook until the vegetables are tender but still crisp, about 3-4 minutes.
04 - Add the cooked noodles to the wok. Pour in all the sauce ingredients (soy sauce, oyster sauce, rice vinegar, sesame oil, cumin, and pepper). Toss everything well to combine and ensure the noodles and vegetables are evenly coated with sauce. Cook for another 2-3 minutes until everything is heated through.
05 - Garnish with white sesame seeds if desired and serve immediately while hot.
