Beef Enchiladas Ultimate Comfort (Print Version)

# Ingredients:

→ Main Filling

01 - 450 grams lean ground beef
02 - 2 grams dried minced onion flakes
03 - 1 packet taco seasoning mix (approx. 30 grams)
04 - 450 grams refried beans

→ Assembly & Toppings

05 - 6 corn tortillas
06 - 250 grams shredded cheddar cheese
07 - 285 millilitres enchilada sauce

# Instructions:

01 - Preheat oven to 175°C. Lightly grease a 33x23 cm baking dish.
02 - In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat. Add dried onion flakes, refried beans, and taco seasoning, stirring until well combined and heated through.
03 - Pour the enchilada sauce into a saucepan and warm gently over low heat.
04 - Spread approximately 120 millilitres of enchilada sauce evenly on the base of the prepared baking dish.
05 - Wrap the corn tortillas in a damp paper towel and microwave for 30 seconds to make them pliable.
06 - Brush each tortilla on both sides with some enchilada sauce. Spoon a portion of the beef mixture down the centre. Sprinkle with cheddar cheese. Roll tightly and place seam side down in the baking dish.
07 - Pour the remaining enchilada sauce evenly over the filled tortillas. Sprinkle with the rest of the cheddar cheese.
08 - Bake uncovered in the preheated oven for 15–20 minutes, or until the cheese is melted and bubbling.
09 - Allow enchiladas to cool slightly before serving.

# Notes:

01 - Use freshly shredded cheddar for optimal melting and flavour.
02 - Avoid overfilling tortillas to prevent splitting during baking.
03 - For added fibre, stir in a can of drained black beans to the filling mixture.
04 - Substitute beef with ground turkey or plant-based mince for alternative dietary preferences.
05 - Elevate heat by using medium or hot enchilada sauce, and garnish with sour cream and chopped cilantro if desired.
