One Pan Enchilada Pasta (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 1 pound lean ground beef.
03 - 1 medium onion, diced.
04 - 3 cloves garlic, minced.
05 - 1 (1 ounce) packet taco seasoning.
06 - 2 ΒΌ cups dry rotini pasta (8 ounces).
07 - 2 cups water.
08 - 2 (10 ounce) cans red enchilada sauce.
09 - 2 cups colby jack cheese, shredded.

# Instructions:

01 - Cook beef and onion in oil 5-7 minutes until beef is done. Drain excess grease.
02 - Stir in garlic and taco seasoning. Cook 1-2 minutes until fragrant.
03 - Add pasta, water, and enchilada sauce. Boil then reduce heat and cover 10-15 minutes.
04 - Remove from heat, stir in cheese and serve.

01 - Use lean beef to avoid excess grease.
02 - Keeps 3-4 days refrigerated.
03 - Can freeze up to 3 months.
