BBQ Ranch Turkey Veggie Skillet (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 lb. organic ground turkey
02 - 1 Tbsp. coconut oil
03 - 1 large sweet potato (16 oz.), cubed 1/2 inch
04 - 2 cups Brussels sprouts (10 oz.), halved or quartered
05 - 1 medium zucchini, sliced into half moons
06 - 2 cups baby bella mushrooms (8 oz.), sliced
07 - 1 yellow onion, diced
08 - 4-6 cloves garlic, minced

→ Sauce & Add-ins

09 - 1/3 cup BBQ sauce
10 - 1/2 cup ranch dressing
11 - 1/4 cup golden raisins (optional)

→ Optional Toppings

12 - Avocado
13 - Fresh cilantro
14 - Lime wedges
15 - Thinly sliced green onion
16 - Shredded cheese

# Instructions:

01 - In a small bowl, combine the BBQ Sauce and Ranch and set aside.
02 - In a large 12-inch skillet over medium heat, brown the turkey. Once browned, remove turkey from pan and set aside.
03 - Add cooking fat to pan. Add cubed sweet potatoes and sauté for 10 minutes, tossing occasionally.
04 - Add the Brussels sprouts and sauté for another 5 minutes.
05 - Add zucchini, mushrooms, onion, and garlic. Sauté for 8-10 minutes or until all vegetables are soft and tender.
06 - Add the browned turkey, BBQ Ranch sauce and optional golden raisins. Stir to combine and cook 3-4 minutes until hot. Serve with optional toppings.

01 - Can substitute ground chicken or pork for turkey
