BBQ Meatloaf Muffins (Print Version)

# Ingredients:

→ Meatloaf Base

01 - 1 1/2 pounds ground beef
02 - 2 teaspoons cooking oil or ghee
03 - 1 small onion, minced
04 - 3 garlic cloves, minced
05 - 1/2 cup Whole30-compliant barbecue sauce
06 - 1 teaspoon dried thyme
07 - 1/2 teaspoon salt
08 - 1/2 teaspoon black pepper

→ Sweet Potato Topping

09 - 2 medium sweet potatoes, peeled and cubed
10 - 1 tablespoon coconut oil or ghee
11 - 1/4 teaspoon salt

# Instructions:

01 - Preheat oven to 350°F.
02 - Sauté minced onions in oil until soft, then add garlic and cook until fragrant, about 30 seconds.
03 - Combine ground beef with cooked onion mixture, BBQ sauce, thyme, salt, and pepper. Mix well.
04 - Divide meat mixture among 12 muffin cups. Bake for 20 minutes until cooked through.
05 - Steam sweet potatoes until tender, about 10-12 minutes. Mash with coconut oil and salt until smooth.
06 - Top each meatloaf muffin with sweet potato mixture. Drizzle with extra BBQ sauce if desired.
