Preheat oven to 400°F (200°C). Spray a 9x13-inch baking dish with cooking oil spray and set aside.

Heat the olive oil in a skillet or pan over medium-high heat. Once hot, add the diced chicken thighs and sear until golden and crisp on the outside.

Add the minced garlic to the chicken and fry until fragrant, about 1 minute. Then add the barbecue sauce and season with salt (approximately ½ teaspoon). Cook until the chicken is well coated, the sauce is glossy, and has slightly thickened. Turn off the heat.

Arrange the taco shells in the prepared baking dish. Sprinkle 1-2 tablespoons of shredded mozzarella cheese into the bottom of each shell to create a barrier that will prevent the shells from becoming soggy.

Spoon 2-3 tablespoons of the BBQ chicken mixture into each shell on top of the cheese layer. Distribute the chicken evenly until all of it is used.

Top the chicken layer with green bell pepper slices, red onion slices, mushrooms, and olives, distributing evenly among all the tacos. Sprinkle the remaining cheese over the top of each taco and finish with a pinch of Italian seasoning or pizza topper.

Bake in the preheated oven for 15 minutes, or until the cheese has melted completely and is slightly golden on top.

Remove from oven and serve hot with optional toppings like sour cream, guacamole, salsa, or any other taco condiments of your choice.
