Fun fusion family dinner (Print Version)

# Ingredients:

→ Base Ingredients

01 - 2 teaspoons olive oil
02 - 1 pound boneless and skinless chicken thighs, diced into 1-inch pieces
03 - 2 teaspoons minced garlic
04 - ⅓ cup barbecue sauce
05 - Salt to season
06 - 10 stand and stuff taco shells
07 - 2 cups shredded mozzarella cheese

→ Pizza Toppings

08 - ⅓ green bell pepper, deseeded and sliced thinly
09 - ¼ red onion, sliced thinly
10 - ¼ cup mushrooms, sliced
11 - 2 tablespoons sliced olives
12 - 1 pinch Italian seasoning or pizza topper

→ Optional Toppings

13 - Sour cream
14 - Guacamole
15 - Salsa

# Instructions:

01 - Preheat oven to 400°F (200°C). Spray a 9x13-inch baking dish with cooking oil spray and set aside.
02 - Heat the olive oil in a skillet or pan over medium-high heat. Once hot, add the diced chicken thighs and sear until golden and crisp on the outside.
03 - Add the minced garlic to the chicken and fry until fragrant, about 1 minute. Then add the barbecue sauce and season with salt (approximately ½ teaspoon). Cook until the chicken is well coated, the sauce is glossy, and has slightly thickened. Turn off the heat.
04 - Arrange the taco shells in the prepared baking dish. Sprinkle 1-2 tablespoons of shredded mozzarella cheese into the bottom of each shell to create a barrier that will prevent the shells from becoming soggy.
05 - Spoon 2-3 tablespoons of the BBQ chicken mixture into each shell on top of the cheese layer. Distribute the chicken evenly until all of it is used.
06 - Top the chicken layer with green bell pepper slices, red onion slices, mushrooms, and olives, distributing evenly among all the tacos. Sprinkle the remaining cheese over the top of each taco and finish with a pinch of Italian seasoning or pizza topper.
07 - Bake in the preheated oven for 15 minutes, or until the cheese has melted completely and is slightly golden on top.
08 - Remove from oven and serve hot with optional toppings like sour cream, guacamole, salsa, or any other taco condiments of your choice.

# Notes:

01 - You can use chicken breast instead of thighs if preferred, but the cooking time may be slightly less to prevent it from drying out.
02 - Feel free to customize with your favorite pizza toppings - pepperoni, pineapple, or different types of peppers would all work well.
03 - For a spicier version, add some red pepper flakes or sliced jalapeños to your toppings.
