01 -
Preheat your oven to 200°C. Arrange bacon slices on a lined baking sheet and bake for approximately 25 minutes until crisp. Once cooked, drain the bacon on paper towels and crumble it into small pieces.
02 -
In a large skillet, brown the ground beef over medium-high heat, breaking it apart as it cooks. Once browned, approximately 8-10 minutes, season with salt, black pepper, garlic powder, onion powder, and smoked paprika. Drain any excess grease from the skillet.
03 -
Add the minced garlic to the skillet with the beef and cook for 1 minute until fragrant. Stir in the BBQ sauce, ensuring it is well combined with the beef mixture.
04 -
Carefully slice the entire package of King’s Hawaiian rolls horizontally, separating the tops from the bottoms. Place the bottom halves of the rolls into a greased 23x33 cm (9x13 inch) baking dish.
05 -
Evenly arrange the halved pepper jack cheese slices over the bottom layer of the Hawaiian rolls in the baking dish.
06 -
Spoon the prepared BBQ beef mixture over the layer of pepper jack cheese. Follow with an even sprinkle of Colby Jack cheese, the crumbled bacon, and crispy fried onions.
07 -
Place the top halves of the rolls over the filling, gently pressing down. Brush the tops of the rolls with melted butter and sprinkle generously with sesame seeds.
08 -
Bake the sliders in the preheated oven at 175°C for 10-15 minutes, or until the cheese is melted and bubbling, and the tops are golden brown. Slice along the roll seams and serve immediately.
