Hawaiian-Style Bacon Pineapple BBQ Chicken (Print Version)

# Ingredients:

→ Main Ingredients

01 - 4 chicken breasts (skinless, boneless - use thinly sliced chicken breasts)
02 - 1 cup BBQ sauce
03 - 1 cup pineapple, diced (plus extra for garnish)
04 - 6 strips bacon, cooked and diced
05 - ¼ red onion, sliced (about ¼ cup, plus extra for garnish)
06 - 1 cup Mozzarella cheese, shredded
07 - 2 green onions, diced

# Instructions:

01 - Preheat the oven to 375°F (190°C).
02 - Place the thinly sliced chicken breasts in a single layer in a casserole dish or baking pan.
03 - Using a spoon or brush, coat the top of each chicken breast generously with BBQ sauce, making sure to cover the entire surface.
04 - Distribute the diced pineapple evenly over the BBQ-coated chicken breasts.
05 - Sprinkle the cooked and diced bacon pieces over the chicken and pineapple layer.
06 - Scatter the sliced red onion over the top of the bacon layer.
07 - Top everything with an even layer of shredded mozzarella cheese, covering all the ingredients.
08 - Bake uncovered in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and no longer pink in the center. If desired, broil for the last 4 minutes to get a golden, bubbly cheese top.
09 - Before serving, garnish the chicken with a small amount of extra diced pineapple, a few slices of red onion, and the diced green onions for added color and flavor.

# Notes:

01 - Using thinly sliced chicken breasts ensures they cook evenly and quickly.
02 - You can cook the bacon ahead of time to make assembly faster.
03 - For a spicier version, add a few red pepper flakes or use a spicy BBQ sauce.
