In a bowl, mash the avocado until mostly smooth but still slightly chunky. Add lime juice, diced tomato, salt, and pepper. Mix gently to combine.

Evenly spread butter on one side of each bread slice. Lay 2 slices, buttered side down, on a work surface. Top each with a generous layer of guacamole, then divide bacon and cheese evenly on top. Sprinkle with cilantro if desired. Cover with remaining bread, buttered side facing out.

Preheat a skillet over medium heat. Place sandwiches into the pan and cook 2–3 minutes per side, pressing gently, until bread is golden and cheese is melted. For extra melty cheese, cover the pan briefly while grilling.

Transfer grilled sandwiches to a board, allow to cool slightly, then slice in half and serve immediately. Enjoy warm, optionally with chips, salsa, or your preferred dip.
