14 - Shredded cheddar cheese (or cheddar and Monterey Jack blend)
15 - Crispy bacon, cooked and chopped

17 - Ripe tomato, diced
18 - Shredded iceberg lettuce
19 - Red onion, thinly sliced

# Instructions:

01 - Preheat your oven to 220°C (425°F). Arrange frozen tater tots in a single layer on a baking sheet. Alternatively, for air frying, cook at 200°C (400°F).
02 - Bake the tater tots for 25-30 minutes, turning them halfway through, until they are golden brown and extra crispy. If using an air fryer, cook for 15-20 minutes, shaking the basket halfway.
03 - While the tots bake, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until it is thoroughly browned. Drain any excess fat from the skillet.
04 - Stir the finely chopped onion and minced garlic into the browned beef, cooking until fragrant. Incorporate the ketchup, Dijon mustard, Worcestershire sauce, smoked paprika, salt, and pepper. Allow the mixture to simmer for 2-3 minutes to meld the flavors, then remove from heat.
05 - In a small bowl, whisk together the mayonnaise, ketchup, Dijon mustard, and optional pickle brine and hot sauce. Refrigerate the sauce until ready to serve, allowing flavors to combine.
06 - Transfer the hot, crispy tater tots to an oven-safe platter or a cast-iron skillet. Evenly sprinkle half of the shredded cheese over the tots.
07 - Distribute the seasoned ground beef mixture uniformly over the cheese-covered tater tots. Then, sprinkle the remaining shredded cheese generously on top.
08 - Return the platter to the oven for approximately 5 minutes, or until the cheese is completely melted and bubbly.
09 - Remove the platter from the oven. Artfully arrange the cooked bacon, shredded lettuce, diced tomatoes, thinly sliced red onions, and diced pickles over the melted cheese.
10 - Generously drizzle the prepared signature burger sauce over the loaded totchos. Serve immediately with extra sauce on the side for dipping.
