Avocado Cilantro Salsa (Print Version)

# Ingredients:

→ Avocado Salsa

01 - 1 onion, chopped
02 - 4 ripe avocados, peeled, cored and diced
03 - 4 medium vine-ripened tomatoes, seeded and diced
04 - 1 jalapeño, seeded and chopped
05 - ¼ cup fresh cilantro leaves, finely chopped

→ Dressing

06 - ¼ cup olive oil
07 - ¼ cup fresh lime juice
08 - 2 cloves garlic, crushed
09 - ½ teaspoon ground cumin
10 - ¾ teaspoon salt
11 - ¼ teaspoon ground black pepper
12 - 2 tablespoons fresh cilantro, finely chopped

# Instructions:

01 - Cover chopped onion with cool water in a small bowl to mellow the harsh bite. Let sit for at least ten minutes, stirring once or twice, while preparing other ingredients.
02 - Drain onion. Add to mixing bowl with diced avocados, tomatoes, jalapeños, and chopped cilantro.
03 - Whisk all dressing ingredients together in a smaller bowl until well combined.
04 - Pour dressing over avocado salsa and gently toss to evenly combine.
05 - Serve with tortilla chips.

# Notes:

01 - For extra heat, add red pepper flakes or cayenne
02 - Red onions are preferred but white onions work too
03 - Best served fresh
