Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan with nonstick cooking spray.

In a small bowl, mix together the light brown sugar and ground cinnamon. Set aside. Toss the chopped apples in 2 tablespoons of granulated sugar and set aside.

In a large mixing bowl, cream together the softened butter and remaining granulated sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and a pinch of salt.

Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.

Spread half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter. Layer half of the chopped apples on top. Repeat with the remaining batter, cinnamon sugar, and apples.

Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Allow the bread to cool in the pan for 10 minutes before removing it to a wire rack to cool completely. In a small bowl, mix the powdered sugar with enough milk to achieve a drizzling consistency. Drizzle the glaze over the cooled bread.
