To a blender, add the yogurt, apple butter, date, miso, vanilla, cinnamon, cardamom, salt, and soy milk. Blend on high until smooth.

Add chia seeds to a bowl or storage container, then pour the blended mixture over them. Whisk together and let sit for 5 minutes. Whisk again to remove clumps, then cover and refrigerate for at least an hour.

Add oats, walnuts, dates, and a pinch of salt to a mini food processor. Pulse until crumbly.

Heat a sauté pan over medium-low heat. Add apples, maple syrup, cinnamon, 1/4 cup water, and a pinch of salt. Stir to combine and sauté for 3-4 minutes, adding water as needed until apples soften and most liquid evaporates.

Divide chia pudding into 3 jars. Top with stewed apples and crumble. Optionally, add extra apple butter and maple syrup before serving.
