Apple Crumble Chia Pudding (Print Version)

# Ingredients:

→ Chia Pudding

01 - 1/3 cup unsweetened plain plant-based yogurt
02 - 3 tbsp apple butter
03 - 1 medjool date
04 - 1 tsp yellow miso paste
05 - 1 tsp vanilla extract
06 - 1 tsp cinnamon
07 - 1/4 tsp cardamom
08 - 1/4 tsp kosher salt
09 - 3/4 cup soy milk
10 - 1/3 cup chia seeds

→ Crumble

11 - 3 tbsp gluten-free rolled oats
12 - 3 tbsp walnuts or pecans
13 - 2 medjool dates

→ Stewed Apples

14 - 2 apples, diced or thinly sliced
15 - 2 tsp maple syrup
16 - 1/4 tsp cinnamon

→ Optional Toppings

17 - Extra apple butter
18 - Maple syrup

# Instructions:

01 - To a blender, add the yogurt, apple butter, date, miso, vanilla, cinnamon, cardamom, salt, and soy milk. Blend on high until smooth.
02 - Add chia seeds to a bowl or storage container, then pour the blended mixture over them. Whisk together and let sit for 5 minutes. Whisk again to remove clumps, then cover and refrigerate for at least an hour.
03 - Add oats, walnuts, dates, and a pinch of salt to a mini food processor. Pulse until crumbly.
04 - Heat a sauté pan over medium-low heat. Add apples, maple syrup, cinnamon, 1/4 cup water, and a pinch of salt. Stir to combine and sauté for 3-4 minutes, adding water as needed until apples soften and most liquid evaporates.
05 - Divide chia pudding into 3 jars. Top with stewed apples and crumble. Optionally, add extra apple butter and maple syrup before serving.

# Notes:

01 - Use an immersion blender in a long storage jar to simplify cleanup.
02 - Whisk chia pudding a second time after 5 minutes to prevent clumps.
03 - Add more milk to adjust the pudding's thickness to your preference.
