Cinnamon Apple Cheesecake (Print Version)

# Ingredients:

01 - COOKIE CRUST:.
02 - 200 g digestive or graham crackers.
03 - ½ teaspoon ground nutmeg.
04 - 1.5 teaspoon ground cinnamon.
05 - 1.5 tablespoon dark brown sugar.
06 - 50 g butter, melted.
07 - APPLES AND CRUMBLE:.
08 - 150 g apple, diced small.
09 - 1 tablespoon granulated sugar.
10 - 1 teaspoon ground cinnamon.
11 - 100 g all-purpose flour.
12 - 80 g dark brown sugar.
13 - 70 g butter, room temperature.
14 - CHEESECAKE:.
15 - 600 g cream cheese, room temperature.
16 - 200 g granulated sugar.
17 - 150 g sour cream, room temperature.
18 - 1 tablespoon cornstarch.
19 - 2 teaspoon vanilla extract.
20 - 3 large eggs, room temperature.

# Instructions:

01 - Blend cookies with spices and sugar, mix in melted butter. Press into pan and pre-bake 10 minutes.
02 - Mix diced apples with cinnamon sugar. Make crumble by mixing flour, sugar and butter.
03 - Beat cream cheese and sugar, add sour cream mixture and eggs. Mix until just combined.
04 - Pour filling in crust, top with apples and crumble.
05 - Bake in water bath at 160°C for 80-90 minutes until slightly wobbly.
06 - Cool in oven 1 hour, then room temperature 1 hour, then refrigerate 6+ hours.
