Fresh Apple Salad (Print Version)

# Ingredients:

01 - 1 red apple, cut into matchstick pieces.
02 - 1 green apple, cut into matchstick pieces.
03 - 2 tablespoons lemon juice.
04 - 2 cups matchstick carrots.
05 - ¼ cup yellow onion, finely diced.
06 - ⅓ cup dried cranberries, sweetened.
07 - ½ cup vanilla yogurt.
08 - ¼ cup mayonnaise.
09 - 1 tablespoon sugar.
10 - ¼ teaspoon salt.
11 - ¼ teaspoon black pepper.
12 - 1 cup canned mandarin segments, drained.

# Instructions:

01 - Cut apples into matchsticks, toss with lemon juice and let sit 5 minutes.
02 - Combine carrots, onion, and cranberries in large bowl.
03 - Add lemon-soaked apples to bowl.
04 - Add yogurt, mayo, sugar, salt and pepper. Mix until well combined.
05 - Gently fold in mandarin segments.
06 - Refrigerate at least 3 hours before serving.

# Notes:

01 - Lemon juice prevents apple browning.
02 - Can be made up to a day ahead.
03 - Flavors improve with chilling time.
