Paleo Banana Muffins (Print Version)

# Ingredients:

01 - 3 large ripe bananas with brown spots.
02 - 3 large eggs.
03 - 1 teaspoon pure vanilla extract.
04 - 1 teaspoon cinnamon.
05 - 1 teaspoon baking soda.
06 - 1/2 teaspoon baking powder.
07 - 1/4 teaspoon salt.
08 - 3 cups almond flour.
09 - 1/4 cup dark chocolate chips.
10 - Cooking spray.

# Instructions:

01 - Preheat oven to 350F. Spray silicone muffin tin with cooking spray.
02 - Blend bananas, eggs, vanilla, spices, leaveners and salt until smooth.
03 - Add almond flour, process just to combine. Stir in chocolate chips.
04 - Scoop into muffin tin. Bake 25-30 minutes until golden and toothpick clean.
05 - Cool for 20 minutes before serving.

# Notes:

01 - Must use overripe bananas.
02 - Store loosely covered, not airtight.
03 - Can freeze up to 3 months.
04 - Check doneness from 17 minutes.
