Alice Springs Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 4 skinless, boneless chicken breasts (6 ounces each)
02 - 1 teaspoon seasoning salt
03 - ¼ teaspoon garlic powder

→ Honey Mustard Sauce

04 - ½ cup Dijon mustard
05 - ⅓ cup honey
06 - ¼ cup mayonnaise
07 - 2 teaspoons Worcestershire sauce
08 - 1 tablespoon dried onion flakes

→ Toppings

09 - 6 slices bacon, cut in half
10 - 2 cups sliced fresh mushrooms
11 - 2 cups freshly shredded Colby-Jack cheese
12 - 2 tablespoons chopped fresh parsley

# Instructions:

01 - Pound chicken breasts between plastic wrap to ½-inch thickness. Season both sides with seasoning salt and garlic powder.
02 - Mix mustard, honey, mayonnaise, Worcestershire, and dried onion flakes. Reserve half for serving. Marinate chicken in remaining sauce for 1-8 hours if time permits.
03 - Cook bacon in large ovenproof skillet until crisp. Remove to paper towels, reserve drippings.
04 - Sauté mushrooms in 1 tablespoon bacon drippings until softened, about 5 minutes. Remove to bowl.
05 - Cook chicken in 1 tablespoon bacon drippings, 5 minutes per side. Top with reserved sauce, mushrooms, bacon, and cheese.
06 - Bake at 350°F for 15-20 minutes until chicken reaches 165°F. Let rest briefly, serve with remaining sauce and parsley.
