Sauté mushrooms in 1 tablespoon bacon drippings until softened, about 5 minutes. Remove to bowl.

Cook chicken in 1 tablespoon bacon drippings, 5 minutes per side. Top with reserved sauce, mushrooms, bacon, and cheese.

Bake at 350°F for 15-20 minutes until chicken reaches 165°F. Let rest briefly, serve with remaining sauce and parsley.
