Preheat the Air Fryer to 320 F / 160 C and line the bottom with parchment paper.

Rinse the chicken under cold water and pat dry with paper towels. Place the chicken on a large plate. Season the entire chicken, including under the skin, with salt and pepper.

In a small bowl, mix Dijon mustard, unsalted butter, chopped thyme, chopped parsley, and chopped garlic. Rub the mixture over the outside of the chicken, inside the cavity, and underneath the skin.

Stuff the cavity of the chicken with 4 peeled garlic cloves.

Place the chicken in the Air Fryer basket, breast side down, and roast for 30 minutes.

Turn the chicken breast side up and roast for 20 minutes. Remove the basket, pour honey on top, and gently brush it over the skin. Return the chicken to the basket and roast for another 10–15 minutes.

Let the chicken rest in the Air Fryer with the basket open for 10–15 minutes before carving. Serve with your favorite side dish and the pan juices from the Air Fryer.
