Mix panko with olive oil. Microwave 2-4 minutes until lightly browned. Cool.

Whisk eggs, flour, mayonnaise, dijon, Old Bay seasoning, salt, and pepper.

Dip fish pieces in egg mixture, then panko, shaking off excess.
