Crispy Air Fryer Fish Sticks (Print Version)

# Ingredients:

→ Brine

01 - 6-8 cups Cold Water
02 - ¼ cup Salt

→ Fish and Coating

03 - 1 ½ pounds White Fish (Tilapia, Halibut, Haddock, or Cod)
04 - 2 cups Panko Breadcrumbs
05 - 2 tablespoons Olive Oil
06 - 2 Large Eggs
07 - ¼ cup All-Purpose Flour

→ Seasonings

08 - ¼ cup Mayonnaise
09 - 2 tablespoons Dijon Mustard
10 - 1 tablespoon Old Bay Seasoning
11 - ⅛ teaspoon Salt
12 - ⅛ teaspoon Black Pepper

# Instructions:

01 - Combine water and salt in large bowl. Add fish and brine for 15 minutes.
02 - Mix panko with olive oil. Microwave 2-4 minutes until lightly browned. Cool.
03 - Whisk eggs, flour, mayonnaise, dijon, Old Bay seasoning, salt, and pepper.
04 - Dip fish pieces in egg mixture, then panko, shaking off excess.
05 - Cook at 400°F for 10-12 minutes, flipping halfway. Spray with cooking spray if needed for browning.

01 - Cut fish into 4-inch pieces
02 - Work in batches for single layer
03 - Spray basket to prevent sticking
