# Instructions:

01 - Preheat your air fryer to 350°F (175°C).
02 - Slice the eggplant into thick rounds, approximately 1/2 inch thick. Cut slits in the center of each slice to create openings for the sauce.
03 - In a shallow bowl, mix together the avocado oil, white sugar, low sodium soy sauce, minced garlic, and chili oil (if using).
04 - Line the air fryer basket or tray with parchment paper to prevent sticking and simplify clean-up.
05 - Arrange the eggplant rounds in a single layer in the air fryer basket or tray. Spoon the sauce mixture over each slice, ensuring even coverage.
