Heat olive oil in a skillet over medium heat. Add finely chopped onion and minced garlic; cook until softened, about 2–3 minutes.

Add ground beef to the skillet. Season with salt, black pepper, and smoked paprika. Cook, breaking apart with a spatula, until beef is browned throughout.

Stir in ketchup and mustard until evenly combined. Remove skillet from heat and set beef mixture aside.

Lay a flour tortilla flat. Arrange a layer of shredded cheddar cheese in the centre. Spoon the beef mixture over the cheese, then add diced tomato, shredded lettuce, and sliced pickles as desired.

Fold in both sides of the tortilla, then roll up tightly to secure the filling, forming a sealed wrap.

Preheat air fryer to 190°C. Lightly spray each wrap with olive oil spray to promote browning.

Place wraps seam-side down in the air fryer basket. Cook for 6–8 minutes, turning halfway through, until golden and crisp.
