Pancake Sausage Breakfast Bake (Print Version)

# Ingredients:

01 - 2 cups (prepared) pancake mix
02 - 300 g cooked breakfast sausage, crumbled
03 - 4 large eggs
04 - 120 ml milk
05 - 100 g shredded cheddar cheese
06 - 2 tablespoons maple syrup, plus extra for serving
07 - 1/2 teaspoon salt
08 - 1/4 teaspoon ground black pepper
09 - Butter or non-stick spray for greasing

# Instructions:

01 - Set oven temperature to 180°C. Grease a 22 x 33 cm baking dish with butter or non-stick spray.
02 - In a skillet over medium heat, cook the sausage, crumbling it until evenly browned and fully cooked. Set aside.
03 - Mix pancake batter according to package instructions or favorite homemade recipe.
04 - Pour half of the prepared pancake batter into the greased baking dish, spreading it evenly.
05 - Distribute cooked sausage evenly over the batter. Sprinkle shredded cheddar cheese on top and drizzle with 2 tablespoons of maple syrup.
06 - In a bowl, whisk eggs, milk, salt, and black pepper thoroughly. Pour this mixture evenly over the contents in the baking dish.
07 - Pour the remaining pancake batter over the dish, using a spatula to gently spread and cover the filling.
08 - Place the dish in the oven and bake for 30–35 minutes, or until golden brown and a toothpick inserted in the center emerges clean.
09 - Allow to cool for 5 minutes before slicing. Serve warm with additional maple syrup, fresh fruit, or preferred breakfast accompaniments.
