Fajita Chicken Casserole Bake (Print Version)

01 - 2 large cooked chicken breasts, shredded or diced
02 - 1 red bell pepper, sliced
03 - 1 green bell pepper, sliced
04 - 1 yellow bell pepper, sliced
05 - 1 small red onion, sliced
06 - 225 g cream cheese, softened
07 - 120 ml sour cream
08 - 2 tablespoons olive oil
09 - 2 teaspoons fajita seasoning
10 - 0.5 teaspoon garlic powder
11 - Salt, to taste
12 - Black pepper, to taste
13 - 200 g shredded cheddar cheese or Mexican cheese blend

14 - Fresh chopped cilantro or sliced green onions

# Instructions:

01 - Preheat the oven to 190°C. Lightly grease a 23x33 cm baking dish.
02 - Heat olive oil in a skillet over medium heat. Add sliced red, green, and yellow bell peppers along with red onion. Sauté for 4–5 minutes until vegetables are slightly softened. Season with fajita seasoning, garlic powder, salt, and pepper.
03 - In a large mixing bowl, combine shredded or diced chicken, sautéed vegetables, cream cheese, and sour cream. Mix thoroughly until the cream cheese is fully incorporated.
04 - Spread the chicken and vegetable mixture evenly into the prepared baking dish. Generously sprinkle shredded cheese over the top.
05 - Transfer the dish to the oven and bake uncovered for 20–25 minutes, until the cheese is melted, bubbly, and golden brown.
06 - Allow the casserole to cool for 5 minutes. Garnish with cilantro or green onions before serving. Enjoy as is, or accompany with warm tortillas or rice as preferred.

01 - For a spicier dish, add sliced jalapeños with the vegetables or sprinkle chili flakes on top before baking.
