Slow Cooker Chicken Tater Tot Casserole (Print Version)

# Ingredients:

01 - 32 oz frozen tater tots (about half a standard bag)
02 - 6 slices bacon, cooked and crumbled (or 1 cup pre-cooked bacon pieces)
03 - 2 lbs boneless, skinless chicken breasts
04 - 2 cups shredded cheddar cheese, divided
05 - 1 cup milk
06 - Salt and pepper, to taste

# Instructions:

01 - Cook bacon until crispy, then crumble and set aside. Season chicken breasts lightly with salt and pepper.
02 - Spray the insert of your slow cooker with nonstick cooking spray to prevent sticking.
03 - Place seasoned chicken breasts in a single layer at the bottom of the slow cooker. Pour milk over the chicken. Sprinkle 1 cup of the shredded cheese and half of the crumbled bacon over the chicken.
04 - Arrange the frozen tater tots in an even layer on top of the chicken and cheese mixture. Sprinkle the remaining 1 cup of cheese over the tater tots.
05 - Cover the slow cooker with its lid and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and can be easily shredded.
06 - During the last 30 minutes of cooking, sprinkle the remaining bacon over the top of the casserole.
07 - Once cooking is complete, use two forks to shred the chicken right in the slow cooker. Gently mix everything together, allowing the shredded chicken to combine with the cheesy tater tots and bacon. Serve hot, garnished with additional cheese or fresh herbs if desired.

# Notes:

01 - The casserole will be very hot when first done cooking, so let it stand for 5-10 minutes before serving.
02 - For a crispier top, transfer to a baking dish and broil for 2-3 minutes before serving.
03 - This recipe makes great leftovers and can be easily reheated the next day.
